Resumen:
Stability of performance in wheat quality has long been a problem, with the end-product characteristics of the harvest fluctuating markedly over years and environments (Johansson et al., 2003). The problem may become accentuated in the future due to climatic change, which seems poised to expose the crop to more extreme forms of stress than hitherto encountered. In the current work, the main objective was to study the effect of heat stress during grain filling on thousand grain weight (TGW), flour protein content (FPC) and grain protein composition as evaluated by SDS-PAGE and RP-HPLC.
