The use of biopolymers for preparing iongels has gained interest because of their inherent biocompatibility and low toxicity. Iongels are soft-like materials consisting of a 3D network structure containing a percolated ionic liquid. Iongels, which present high ionic conductivity, flexibility and high mechanical resistance, result in materials of high potentiality for applications in diverse fields, such as bioelectronics or energy storage. In this chapter we summarized the different preparation methods of iongels including biopolymers such as cellulose, chitin, guar gum or gelatin. In the second part of the chapter the application of biopolymer based iongels in different technologies ranging from electroactuators, electronic noses, electronic skin devices, bioelectrodes, batteries or drug delivery will be shown.
