Resumen:
In this work,anovelnanobiocatalyst(L?Mcn4@Ca2Fe2O5) wassynthesizedfromBacilluslipase onsrebrodolskitenanoparticles.Bacillussp. MCn4culture mediawasoptimizedreaching themaximumlipolytic activityusingpeptone7.5g/Landsucrose5g/LandCa2Fe2O5, wassynthesizedandcharacterized(size of100?150nm).L?Mcn4@Ca2Fe2O5 wasobtainedbyadsorption(12U/mgoxide) and successfully characterized by differenttechniques. Accordingto the bestimmobilization conditions,pH4and100Mmionic strength, anadsorptionmodelwithtwo stageswasproposed:initial interfacial activationfollowedby multi-point electrostatic interactions. Stability studiesshowed anenhancementin its performancebetween50and70°Candagainstethanolcomparedwithfree enzymeandthethermal decompositionprocesswassofter whenlipase wasimmobilized. The biocatalyst hydrolyzed fish oil showingenrichmentin the PUFAscontentwithanincrease onDHAof1.2 fold showing a great potential for its use in the foodindustry.
