All rights reserved Studies in Natural Products Chemistry Bioactive Natural Products Edited by Atta-ur-Rahman Abstract Reactive oxygen species are involved in numerous cellular processes, but excessive quantities produce oxidative stress, causing cell damage linked to various chronic diseases. To mitigate this stress, it is necessary to balance reactive oxygen species and antioxidant compounds such as polyphenols, one of the most important antioxidant compounds. Polyphenols can be obtained from bio-wastes, giving them added value. Accordingly, this work lists the most used bio-wastes for the extraction of polyphenol compounds, the environmentally friendly extraction techniques, different kinetic models applied, and optimization methods used to determine the optimal conditions of the extraction process.
