Resumen:
THE DEVELOPMENT OF APPORPIATE TECHNOLOGIES FOR THE PRODUCTION OF PROBIOTIC CULTURE IS A KEY RESEARCH AREA FOR THEIR INDUSTRIAL PRODUCTION. SINCE BIOMASS PRODUCTION IN COMERCIAL CULTURE MEDIA IS EXPRENSIVE TO BE PERFORMED AT LARGE SCALE, LOOKING FOR ECONOMICAL INGREDIENTS IS MANDATORY. IN THIS SENSE, FOOD INDUSTRY BY-PRODUCTS,SUCH AS MOLASSE,CHEESE WHEY OR DIFFERENT FLOURS HAVE BEEN PROPOSED AS ALTERNATIVE INGREDIENTS. THE AIM OF THIS WORK WAS TO FORMULATE AN ECONOMICAL CULTURE MEDIUM FOR LACTOBACILLUS SALIVARIUS A3iob USING BY-PRODUCTS OF THE FOOD INDUSTRY. LACTOBACILLUS SALIVARIUS A3iob WAS ACTIVED IN MRS BROTH (37ºC, 16H). BEFORE USE, THE ACTIVE CULTURE WAS CENTRIFUGED AND WASHED TWICE WITH PHSOPATE BUFFERED SALINE SOLUTION. FOR MEDIUM FORMULATION,A BASAL MEDIA E WAS PREPARED CONTAINING CHEESE WHEY POWDER (1,5%), MOLLASES (1%), TWEEN 80(0,1%) MgSO4 (0O,002%) MnSO4(0,005%). AS A N SOURCE, THE EFFECT OF THE ADITION OF YEAST EXTRACT (BRITANIA)OR COMERCIAL SOY FLOUR. FOR THESE ASSAY, BATH CULTURES WERE INCUBATED FOR 8 H 37ªC UNDER MICROAEROPHILIC CONDITIONS.ONCE THE N SOURCE SOY FLOUR WERE SELECTED, DIFFERENT MOLASSES CONCENTRATIONS WERE ASSESSED USING GROWTH CURVES ON 100ML OF E MEDIA.THE RESULTS WERE EXPRESSED AS CFU/ML AND IN ALL CASES MRS BOTH WAS USED AS CONTROL MEDIUM. THE RESULTS OF N SOURCE STUDIES SHOWED THAT YEAST EXTRACT WAS MORE SUITABLE THAN SOY FLOUR FOR THE GROWTH OF Lactobacillus A3iob.IN RELATION OF CHESSE WHEAY CONCENTRATION 1,5% WAS ENOUGHT TO REACH 108 UFC/MLA VALUE SIMILAR TO THE OBTAIN IN MRS BROTH (CONTROL) FINALLAY,3% MOLLASES WAS ADEQUATE FOR THE GROWTH OG L. SALIVARIUS A3iob . THE RESULTS INDICATE THAT E MEDIUM,REINFORCED WITH YEAST EXTRACT (0,5%), MOLLASES(3%)AND WHEY POWDER (1,5%) WOULD REPRESENT AN ECONOMICAL ALTERNATIVE FOR THE SCALING UP BIOMASS PRODUCTION OF Lactobacillus salivarius A3iob.
