Species identification in products of animal origin is important for:I) Economic fraud preventionII) Health safety (allergies)III) Matters related to religion or cultureIV) Forensic casesV) Species conservation and protectionHere we present the general procedure used in our laboratory to solve cases (mainly food crime cases) at the request of judicial authorities.Pork ham adulterated with chicken and beef, Goat cheese adulterated with cow milk, Sausage prepared with a mixture of beef and horse meat and Marsh deer (Blastocerus dichotomus) and Pampas deer (Ozotoceros bezoarticus) hunted illegally in protected areas and sold as different kinds of meat in informal markets have been founded.
