Resumen:
This study aimed to evaluate the antimicrobial effect of oregano essential oil (O.E.O.) and nisin, individually or in combination, over Listeria monocytogenes ScottA. O.E.O. was active against the pathogen in concentration equal or higher than 0.3%(v/v), and presented a sinegistic effect when used in combination with nisin in different concentrations.
