Resumen:
This study aimed to evaluate the antimicrobial effect of many essential oil against Lactobacillus sake 2a.The results indicate that the use of 0.5%(v/v) of bay, clove, garlic, thyme and oregano essential oils can inhibited the growth of Lactobacillus sake 2a, consequently, using this combination system to enhanced the microbiological security of food its necessary to be careful on the nature and concentration of essential oil used in combination with bacteriocinogenic lactic acid bacteria.
