Resumen:
The starch enzymatic conversion by cyclodextrin glycosyltransferasa (CGTase) is generally performed in batch reactors, using high subtrates concentrations. However, CGTase is inhibited by high starch concentrations and several reaction products such as cyclodextrins (CD), maltose and maltotriose. The ultrafiltration membrane reactor (UMR) enables the localization of the enzyme within a defined area, preserving its catalytic activity and allowing reuse. Also allows the removal of products, reducing its inhibitory effect on the enzyme. Moreover, membrane fouling and enzyme activity decay are responsible for strong limitations on performance of these systems. The aim of this study was to optimize the conversion of starch into maltooligosaccharides (MOS) or CD using an UMR.
