Resumen:
Tara
gum is a new galactomannan obtained from the endosperm Caesalpina spinosa,
where mannose: galactose ratio is 3:1. This polysaccharide has a similar to
guar gum and locust bean gum, to which can replace in its industrial and
pharmaceutical applications behavior. In this work were addressed aspects
hydrodynamic and film forming of this gum highlighting its importance and
virtues of this gum of South America origin.
