Resumen:
The health-related problems cause by neglect of the environment are a trend that arises in manyareas of science. Waste accumulation concerns associated with the use of plastic packaging from thefood industry such as bags, containers, and coatings are becoming increasingly difficult to resolve,being one of the most intractable problems in the world. Nanotechnology application in foodindustry through the development and use of biodegradable materials, which are eco-friendly, is thebeginning of a possible solution to this problem. The interest in starch nanocomposites with potentialuse in food products implanting certain outstanding characteristics compared to conventional plasticshas been widely studied. A review of the most important recent results of starch-based nanocompositescontaining different types of nanofillers has been presented. Recent results of starchbasedcomposites containing nanofillers with antimicrobial activity in situ, such as chitin, chitosan,silver, and zinc oxide, on structure, mechanical properties, and antimicrobial activity against a widevariety of microorganisms were presented.
