Resumen:
One type of structure used in microencapsulation areliposomes, which enclose liquid compartments withintheir structure consisting of lipid bilayers and enable theencapsulation of both hydrophilic and lipophilicmaterials. The liposomes have been employed indifferent areas, and in the food industry the applicationsare increasing, like encapsulation of flavour compounds,enzymes, minerals and vitamins. In this work, liposomesformulations with natural lipids have been used asvehicles for transport of vitamin E (α-tocopherol) andvitamin C (ascorbic acid). These vehicles protect andprevent loss antioxidant properties of vitamins, makingthem excellent candidates for ideal vehicle to fortifyfoods with vitamins. Oxidative stability of liposomes wasanalyzed with the purpose of selecting thoseformulations that have the highest stability; the soselected formulations will have a higher vitaminprotection and in keeping the antioxidants properties ofvitamins.
