In this chapter, we summarize the main flow strategies that have been appliedto determine MSG in food samples. We briefly describe different techniques that are employed for determining this analyte, and then we give an overview of the main flow methodologies that are used. In order to give readers a better understanding, we classify the flow methods in enzymatic and chemical-based methods, namely those methods in which enzymatic reactions take place and those that are nonenzymatic. We then give an exhaustive description of flow enzymatic-based methods classified according to the enzyme that is employed.Finally, we describe the flow chemical-based methods that quantify MSG by a chemical approach.
