Resumen:
Garlic contains many organic sulfur compounds. Some of them have a single sulfur atom while some of them have several. Also, some of the sulfur atoms have low oxidation state as -S- or -S-S- while some of them have sulfur of a higher oxidation state (>S=O). Typical examples1are shown in Figure 1.
