Resumen:
Edible films and coating-forming suspensions based on potato starch were successfully produced. Films showed a homogenous and compact structure and excellent transparency. Moreover, they showed typical infrared spectra and thermal degradation patterns as glycerol-plasticized starch films. Andean berries were dip-coated by immersion in the potato starch-based coating solutions. These coatings were well adhered and gave the fruit surface a bright appearance. These preliminary studies suggest that the use of potato starch-based coatings and films constitute a promising strategy for the preservation of Andean berries during postharvest
