The study of arsenic occurrence and its transference to food is fundamental to estimate the risk for the consumers. Arsenic can be transferred from drinking water to cattle tissues and might be dangerous for humans. The aim of this study is to determine arsenic levels in liver and kidney from cattle in the southeast of Córdoba province, an arsenic affected area in Argentina. For that, we quantified the arsenic levels in bovine livers and kidneys. The total arsenic concentration in liver samples ranged from 25 to150 µg/kg (dry weight) and in kidneys from 53 to 500 µg/kg (dry weight). Those levels are not dangerous for human consumption. Still, some samples showed values higher than previously reported.
