Resumen:
The synthesis of bioactive peptides using proteases as biocatalysts can be performed with high specificity and reactivity, under mild operating conditions, which is characteristic of enzymatic processes. This produces a strong impact on the process economy and minor consequences for the environment. In our study we applied new proteases isolated from Asclepias L. (Asclepiadaceae), as a catalyst for the partial or total synthesis of bioactive peptides that could apply as nutraceutical product. The synthesis of an antithrombotic tripeptide was conducted in the medium consisting of ethyl acetate (50%, v/v) - buffer Tris - HCl (pH 8) using crude extract of asclepain as biocatalyst and samples were taken for 24 h. After that, the product of the reaction synthesis was separated by RP - HPLC using a Gilson UV-Visible equipment (254 nm) as detector. The product of synthesis was obtained at tR: 9.4 min, after 5 min of reaction. It was extracted from the organic phase and it´s structure was elucidated by mass spectrometry.
