Resumen:
Biocatalysts, as isolated enzymes or whole cells, are well known as efficient reaction catalysts. Their regio- and stereoselective behavior and their application in organic solvents have remarkably increased their use in the traditional synthetic strategies. In organic medium it is possible to use non polar substrates in reactions with nucleophiles besides water, performing chemoenzymatic processes. Various applications of biotransformations in organic synthesis have been described for different areas of chemical industry in particular in the field of food and cosmetic chemistry. The results obtained by the application of lipases in the synthesis of added value compounds with industrial applications such as: natural detergents used as nutraceuticals and as ingredients in after sun lotions, antioxidant derivatives from agroresidues, a cheap biocatalyst from vegetal sources, etc. will be presented.
