Nowadays, around 8,3% of world?s population has Diabetes Mellitus. These people need to regularly monitor his glycemia level to avoid complications over their health. The usual way to do this control is by monitoring devices known as glucometers, which are based on invasive techniques. This situation led to research intended to develop non invasive glucometers, without apparent success, even when there have been investigations in a wide variety of techniques. One of them is Reflectance Spectroscopy. A prototype based on this method was built to make experimental tests with several samples. As a result, a change in the glucose content on some of them was detected. Particularly, the results obtained in the measurement of samples made of water and milk imitated the optical properties of tissue against variations in their glucose concentration and had high determination coefficients. The wide range of concentrations analyzed and the validity of the results obtained for that range allows the use of the prototype for experimentation in areas different than health. For example, determine the glucose concentration in wine musts and its variation along the vinification process.
