Resumen:
Mass fractal dimensions determined by microscopy and rheology wereused to characterize the microstructure of oleogels emulsions prepared with recoveredand commercial sunflower waxes as structuring agent. The emulsionswere prepared using 2, 3.5, and 5% w/w wax in oleogel. Fractal dimension wasrelated to macroscopic behaviors through analysis rheological and long-term kineticstability of emulsions.
