The aim of this work was to evaluate the effect of the addition of gum arabic in combination with bamboo fiber or cactus cladode mucilage on the physicochemical and antioxidant properties of orange pulp powder obtained by freeze drying. Results showed that all three powders presented water content values below 3%. The addition of solutes lowered the hygroscopicity of the powder, being the bamboo fiber the one with the highest lowering capacity. Changes in the physical properties of the powder were promoted by solute addition, without significant differences related to the kind of solute used. Samples with solutes added showed higher lightness, less orange hue and lower chrome values, being the maximum force registered during the compression test higher than that registered in the sample without solutes. Freeze drying favored the extraction of phenol compounds and therefore increased the antioxidant activity of samples comparing to fresh orange puree. The presence of added solids protected in some extent the constitutive bioactive compounds during processing.
