Resumen:
The use of microbial phospholipase A1 and phospholipase A2 in the  enzymatic degumming of sunflower oil is a well-established process step in physical refining of vegetable oil.The assays were carried out applying Lecitase Ultra (Phospholipase A1, PLA1, from /Thermomyces lanuginosus/) and Maxapal A2 (Phospholipase A2,  PLA2 from /Aspergillus niger/)As the pH was kept in the range of 4.9-5.1, at 50°C, less than 10 mg/kg of phosphorous content of the oil was obtained. After three hours of degumming, acid values were achieved over 5 mg KOH / g fat.
