Resumen:
Chitosan (ChNat) is a linear polysaccharide formed byβ-1→4 glucosa􀅵i􀅶e a􀅶d N-acetyl-glucosamine unitsderived from deacetylation of chitin. Is non-toxic,biocompatible, antioxidant, among other properties.1Its widely used as carrier of drugs and bioactive agentsin micro and nano-systems.2 However, uses of thispolymer its limited because of its low solubility atneutral and alkaline pH. Therefore, extensive chemicalmodifications have been employed. Grafting withcarbohydrates demonstrates to improved solubilitysince the incorporation of hydrophilic moieties.3Maillard reaction (MR) is a non-enzymatic,intermolecular condensation reaction between aminoand carbonyl groups. This reaction results an easy, ecofriendlyand biocompatible way to obtain derivatives.4Taking this background, modifications of ChNat usinglactose (ChLac) have been proposal.
