Resumen:
Introduction. Texture is decisive for commercial selection of vegetable products being governed by their chemical composition and histological structure. Textural quality lies in the ‘mechanical unit’ whose components are cell wall (CW), middle lamellae (ML) and cellular membrane (MB). Turgor pressure (TP) is the hydrostatic pressure that intracellular liquid exerts on the MB and is supported by CW. This pressure has important effects on tissue mechanical properties. The aim of the present work is to determine the molecular weight (MW) profile of polymers of pumpkin-CW  and its change when turgor pressure is modified in order to understand textural changes observed during vegetal processing.
