Resumen:
A slight reduction of water activity (aW) to values ranging 0.93-0.97 by dewatering and impregnation soaking (DIS) processes is a common “hurdle” in multicomponent systems designed for minimal preservation of fruits. DIS processes affect in various degrees the microstructural and physical properties of the vegetable tissue and, therefore, the texture of fruits. The objective of this work was to study the effect of the DIS procedure (atmospheric or in vacuum) using glucose as humectant and of the presence of calcium in the impregnation solution in the structure and ultrastructure of melon (mainly cell walls), and to relate these changes with the textural characteristics determined with an Instron Universal Testing Machine.
