Resumen:
Grape pomace extract (GE) and corn steep liquor (CSL) were used as main carbon andnitrogen sources for bacterial nanocellulose (BNC) production by Gluconacetobacter xylinus. Statisticaloptimization of the process enabled to obtain 6.7 g L-1 of dry cellulose in the presence of 43.1 g L-1glucose and fructose from GE and 20.0 g L-1 of CSL, after static incubation at 28ºC for 25 days. At these conditions, productivity showed two maximum at 5 and 21 days of fermentation. Nevertheless, BNC membranes showed a denser nanofibrils network, and higher thermal stability, crystallinity and storage modulus at longer fermentation times.
