Resumen:
Water is used in most process industries for a wide range of applications. Processes and systems using water are today being subjected to increasingly stringent environmental regulations on effluents and there is growing demand for fresh water. Water pinch analysis may effectively reduce overall fresh water demand and the overall wastewater generated. It offers good results when applied to water using industries. This work describes a water pinch analysis carried out for a winery located in San Juan, Argentina. This industry is the most important of the region and has historically been a handicraft activity and little engineering has been applied. The limiting pollutants selected were COD and total suspended solids to develope the water pinch techniques. This methodology was applied to each sector. The obtained results of water pinch analysis carried out for the winery show reduction in freshwater consumption of 50 % approximately.
