In this paper, model-based estimators were devel-oped to determine the supersaturation and purity of the masse-cuites in the second and third stages of sucrose crystallization inthe sugar industry. The supersaturation is a very important vari-able to control these processes, while purity provides informationabout the quality of massecuites. The estimators were validatedby simulation under different process conditions, contrasting theresults with theoretical models and process data. The resultsobtained evidenced the effectiveness of the proposed estimators.
