The use of different types of non-digestible oligosaccharides (NDO) is very common in the food and pharmaceutical industries. It has been shown that the inclusion of NDO in the diet exerts positive effects on the physiology and productive behavior of animals. Among their beneficial effects, there is abundant evidence that NDOs may possess antimutagenic properties; in fact, we have demonstrated the protective effect of levans and fructooligosaccharides against DNA damage induced by bleomycin in mammalian cells.In the present work, we evaluate the antioxidant capacity of levans and fructooligosaccharides. We used an in vitro experimental model of bovine peripheral blood lymphocytes and the MTT viability test.Lymphocytes were cultured in Ham F12 medium for 48 h. The treatments were performed during the last 24 h.The following treatments were carried out: Untreated control (UC); Positive control: 10% ethanol (PC); Ethanol: 2.5% ethanol (E); Levanes 0.5 mg/ml (L1); 1 mg/ml (L2) and 2 mg/ml (L3); Fructooligosaccharides 0.5 mg/ml (F1); 1 mg/ml (F2) and 2 mg/ml (F3).Significant differences were found between treatments (p
