Introduction. Ilex paraguariensis (Aquifoleaceae) is cultivated in Argentina to produce the product known worldwide as "yerba mate". The most popular forms of consumption include infusion and decoction. Due to its nutritional, energizing, hypoglycemic and antioxidant effects, among others, yerba mate is used in food, pharmaceuticals and cosmetics. In the yerba mate industry, the fruits of I. paraguariensis with no commercial value are discarded and used as fertilizer. On the other hand, oxidative stress related to protein glycation and production of AGEs, leads to the appearance of diseases such as metabolic syndrome, cancer, among others. The antioxidant and anti AGEs activity of the fruits of I. paraguariensis has not been previously studied.Objective. To compare the antioxidant and anti-AGEs activity of a decoction of I. paraguariensis fruits (F) and leaves (L). Materials and Methods. The antioxidant activity was evaluated through the elimination of the DPPH radical and the inhibition of egg yolk lipid peroxidation (ILP). The anti-AGEs activity was evaluated through the inhibition of the formation of: fructosamine (IF), β-amyloids (Iβ), protein carbonylation (IC) and AGEs (IA), by visible, UV and fluorescence spectrophotometry, in a model of bovine serum albumin (BSA) glycation with glucose 5 %. Polyphenols (flavonoids and caffeoylquinic acids) were also quantified by HPLC.Results. Results were expressed as % inhibition (maximal response) or median inhibitory concentration (IC50) (mean ± SEM of three or more assays performed in duplicate). Anti-AGEs activity: F: 0.01 µg/ml: IF 42±4%, IC 17±2%; F 10 µg/ml: IA 38 ± 4%, Iβ 67 ± 7%, CI50 µg/ml
