Resumen:
In the last years, changes in eating habits have promoted the generation of products that add multiplebenefits, medicinal or physiological, to the health of those who consume them. Among these products,D-tagatose stands out, a sweetener considered a good substitute for sucrose due to its similarity inflavor, with a low caloric content, high sweetness, in addition to not promoting residual taste in foods.D-tagatose can be obtained, by enzymatic route, through D-galactose isomerization reactions, catalyzed by L-arabinose isomerase (L-AI). However, in addition to the lack of commercial availabilityof L-AI, the high cost associated with the use of the conventional inducer, isopropyl β-D-1-thiogalactopyranoside (IPTG), in culture media, has made its production on a commercial scale unfeasible. Within this scenario, this study aims to present viable conditions for obtaining the enzymeL-arabinose isomerase from Enterococcus faecium DBFIQ E36 in Escherichia coli BL21 (DE3), in a benchtop bioreactor, using an alternative inducer, lactose, through the process of auto-induction.
