Resumen:
Physicochemical characterization of sunflower lecithin liposomes with or without cholesterol and ascorbic acid or vitamin C by measurements of the temperature dependence of the zeta potential, particle size, conductivity, density and ultrasound velocity in order to contribute to the analysis of the delivery and bioavailability of the vitamin C. Ascorbic acid encapsulated in sunflower phosphatidylcholine liposomes shows well-organized morphology, uniform particle size, which might lead to an improved bioavailability. It could result to be a good alternative to protect and transport vitamin C in the body.
