Glycine Betaine (GB) and Proline (Pro) are two major organic osmolytes that accumulate in a variety of plant species in response to environmental stresses such as drought, salinity and extreme temperatures. Both compounds are thought to have positive effects on membrane integrity along with adaptive roles in mediating osmotic adjustment in plants grown under stress conditions [1]. In this context, an evaluation of controlled dehydration of 1,2-dipalmitoyl-sn-glycero-3-phosphocholine (DPPC) and 1,2-di-O-hexadecyl-sn-glycero-3-phosphocholine (Ether PC) MLV's in presence of these amino acids was performed by FTIR-ATR. Pure water measured by FTIR spectroscopy shows a broad band that could be constituted by subpopulations taking into account the H-bond associations with another water molecules. Monomers, dimers, trimers and tetramers can be observed according to their respective vibrational frequency and intensities. Lipid associated water has a different behavior than ?bulk water? because the interaction with mayor hydration centers of the lipid, decreasing bulk water tetrahedrycaly coordinated and changing it´s vibrational energy. As a result the main water band modifies the profile .
