A neutrino telescopes of a KM3 scale, like IceCube, is a machine designed tostudy the neutrino flux emitted by astrophysical sources. Using this flux or the neutrinoflux produced by the collisions of cosmic ray with the atmospheric nucleons ispossible study the neutrino themselves, studying their interaction with nucleons at energiesunreachable by colliders or, by using this penetrating flux, study the Earth massdistribution.Since the initial flux is known with several uncertainties, the successful of thesestudies are dependent of the way in which we define the observable quantity. In thiswork we discuss the definition and usefulness of the angular observable alpha(E) andthe related eta(E) and we study quantitatively their dependence with the initial fluxuncertainties. These observable works comparing the flux arriving to telescope fromdifferent angular directions. Finally we applied it to the study of the neutrino nucleoninteraction and the Earth density.
