Resumen:
Commercial kappa- and iota carrageenans werecationized with 3-chloro-2-hydroxypropyltrimethy-lammonium chloride in aqueoussodium hydroxide solution. For kappa-carrageenan three derivativeswithdifferent degrees of substitution were obtained. Native and amphoterickappa-carrageenans werecharacterized by NMR and infrared spectroscopy, scanningelectron and atomic force microscopy;methanolysis products were studied byelectrospray ionization mass spectrometry. Young moduli and thestrain at breakof films, differential scanning calorimetry, rheological and flocculationbehavior were alsoevaluated; the native and the amphoteric derivatives showeddifferent and interesting properties. Cation-ization of iota-carrageenan wasmore difficult, indicating as it was previously observed for agarose,thatsubstitution starts preferentially on the 2-position of3,6-anhydrogalactose residues; in iota-carrageenanthis latter unit is sulfated.
