Various organic acids were tested to determine their inhibitory effecs on the growth of two spoilage strains of Lactobacillus plantarum when inoculated into MRS medium. The effect of the different additives was similar for both strains. Decanoic and dodecanoic acid markedly inhibited the N4 and N8 strains growht at pH below 5.0 whit a bacteriostatic effect. However, dodecanoic acid showed an interesting behavior acting as an effective bactericidal inhibitor when added to natural and centrifugated orange juice at pH below 5.0. 20 mg/l of decanoic and dodecanoic acid was the minimun inhibitory concentration
