Native potato starch was acetylated andcharacterized. The influence of this chemical modificationon different properties of the starch was studied. Thecharacterization included the molecular weight, thermalproperties, crystallinity, amylose content, swelling behavior,and pasting and rheological properties. The chemicalmodification induced small changes in the crystallinity ofthe starch and reductions in the gelatinization heat andin the range of temperatures at which it took place. Theamylose content was determined for acetylated andnative potato starches. The swelling of native granuleswas higher than the swelling of acetylated potato starch.With respect to pasting behavior, the native and acetylatedstarches responded in similar ways to changes inthe temperature and glycerol content. Finally, the acetylatedstarch was less pseudoplastic than the native starch.
