For the industrial process of hen egg-white lysozyme (HEWL) purification, the use of a chitin chromatographic matrix with magnetic properties is proposed. After HEWL has been adsorbed, the matrix is separated applying an electromagnetic field and the HEWL is eluted with a purity higher than 95% using a low-cost eluent. The matrix can be reused in multiple successive cycles and the removal of the HEWL does not alter the properties or commercial use of the residual egg white
