This chapter outlines the general nature of potential challenges to consumer health from veterinary drugs used to treat food animals as veterinary drugs and procedures used to regulate these. Specific drug residues of concern are detailed in Chapter 28. Other chapters dealing with food safety aspects of meat are Chapter 11, focusing on control methods for microbiological contamination, and Chapter 26, which outlines the public health threat from meat-borne zoonoses, i.e., agents such as bacteria, viruses, parasites, or prions that can be passed from animals to humans via consumption of meat.
