Resumen:
The objective of the present work was to study the functionality of a phytoproteasa, in organic media with low aw, using different inducers, for its application in the peptide synthesis.  From the solvents effect on the enzyme activity, it was observed that the same one was able to maintain hydrolytic activity both hidrophylic and hidrofobic media. Nevertheless, its behavior cannot become general since in chloroform and hexano, the enzyme only showed 10 % of its activity after 1 h.  The enzyme cannot express its synthesis activity in polar media, in spite of its high stability.   In addition, in hidrofobic media, the solubility of the interest substrates is very low and therefore, this parameter controls kinetic of the catalytic reaction ·
