Since the discovery of fire and its invaluable use for food cooking, innovationhas occurred naturally when we think about food production not only for itsimportance to life but also for health and pleasure reasons. Nowadays, the foodscience and technology community is busy trying to meet a quite challenginggoal: to feed a growing population safely and sustainably (environmentally,socially, and economically). In this sense, the recently published book ?InnovativeFood Processing Technologies: A Comprehensive Review? contributes greatly topresenting the latest new ideas or modifications in food processing.
