Resumen:
In batch cultures of Leuconostoc mesenteroides 3 A the effects of sucrose concentration on growth characteristics, dextran production and metabolic balances were studied. At low sucrose concentrations (20 g.l-1) specific growth and sucrose consumption rates were 0.53 h-1 and 3.12 h-1, respectively. Dextran production was 0.80 g.l-1, At higher concentrations (100 g.l-1), specific growth, sucrose consumption rates and dextran production showed values of 0.20 h-1, 8.46 h-1 and 13.20 g 1-1, respectively.
