Dairy and vegetable-based foods both represent pillars of human nutrition, andtheir consumption is particularly warranted based on the multiples functional propertiesthey carry on and the health benefits they confer. Scientific research supports theconsumption of both dairy and vegetable products to sustain metabolic health. This issupported by their positive effects on the inflammatory and oxidative state and theircontribution to the maintenance of healthy gut microbiota. The current higher demandfor foods with a bonus in functional benefits has triggered novel dairy and vegetable-based foods with accurate targets. These new foods include fortified or enriched foodsand fermented or probiotic foods, which assure essential compounds or improve health-promoting functions. This chapter summarizes some of these recent dairy and vegetableproducts under research designed to promote health and bring well-being. Particularfocus will place on those developed to intervene in metabolic disorders like metabolicsyndrome and related pathologies.
