Resumen:
Chitosan (ChNat) was modified with lactose by Maillard Reaction. FT-IR spectra of derivatives were analyzed. Molecular weight (Mw) were determined by static light scattering (SLS). Results show a decrease in Mw of derivatives, ChNat (595 ± 89 kDa), ChLac48 (143 ± 63) and ChLac60 (47 ± 7 kDa). Cytotoxicity activity were evaluated by MTT assay. Cell line used was rat intestinal epithelial (IEC-18). Cell viability (%) was calculated from the absorbance changes at 570 nm. Results show ChNat and ChLac48 does not decrease viability while ChLac60 presents a 15 % reduction. In conclusion, ChNat derivatives have been obtained by MR with lower Mw. Cell viability has not been affected, indicating possible applications in biological systems.
