Resumen:
The main challenges of the food industry is to provide nutrition and health benefits considering limited resources, prolonged storage and delivery times at world scale. The development of fortified foods containing exogenous molecules, including complex packaging systems seems to be the path to be follow for the present century by using Biotechnology and the new-born nanotechnology at large scale. The present review briefly surveys the present situation of fortified foods based on the topic of those technologies which involve delivery systemsThe wide scale and extensive use of bioactive molecules has brought many advantages in several fields, such as agriculture, health, chemical and food industry.
