Food safety is a global priority and one of the major objectives of current food legislation. However, food microbiological risks are even today one of the main sources of foodborne illnesses. In addition, the greatest losses in food are attributed to microbiological alterations, which decrease their shelf life.The growing consumer demand for minimally processed, more natural, fresh, and convenient food products, as well as the continuous changes at industrial distribution levels associated with globalization, call for major challenges in food safety and quality
