Resumen:
Moisture sorption isotherms of high amylose corn starch (HACS) films at 5, 25, 35 and 45 ºC within an approximate water activity (aw) range of 0.11 to 0.85 were obtained using a static gravimetric method. The Brunauer, Emmet and Teller (BET) model was applied to collected data giving an excellent fit. Results have shown HACS films have a type III BET behavior at all temperatures studied. From the analysis of aw relation with temperature at constant moisture content, using known thermodynamic relationships, the nature of sorbed water was investigated. Conclusions are pointed out.
