Few knows about what happen with the human/environment systems in the border area between hunter gatherer and farming. We consider the long-term relationship between human demography, food production using an archaeological radiocarbon date series and stable isotope on human bones. We analyze here the South American frontier, central west Argentina, were the last cultivars are archaeologically recorded. Here, and in different part of the world, the climatic condition were assumed as a reason to stop of farming. This deterministic perspective is today disputed by ecological perspective, based on environment/system state and where climate, but other variable are playing an explanatory role. This paper will explore demography/human diet trends during the late Holocene in central west Argentina. We try demonstrate here that a boom and bust pattern seems to be common in border areas between hunters and farmers were the domesticate was never more significant than 40% and making reversible the systems.
