In this chapter, the potentiality of using a natural polymer (casein) and a carbohydrate (monosaccharides) as raw material to produce waterborne latexes for coating applications will be presented. Along this chapter, it will be emphasized the importance of controlling the degree of compatibility between polymers by providing the biobased materials with internal (terminal) double bonds during its modification (when it is required) in order to broaden the range of polymer characteristics and to improve their final application properties. Finally, it will be discussed for the two considered systems examples of their application as binders in waterborne coatings.
