In this chapter we explore the complexities of monolayers, bilayers and multilayers of surfactants and polymers on liquid interfaces and solid substrates. We present initially the main experimental techniques used to study the equilibrium, dynamical properties and rheology of these systems and then, we focus our attention on monolayers at liquid interfaces, lipid bilayers as model for biological membranes, and finally in polyelectrolyte multilayers. We give a general overview of the potential applications of these systems.
